It's the Holiday Season! Wait? What? Didn't we just help make a Halloween costume and serve a big family Thanksgiving dinner? If you are like me, the older I get, the more the holidays seem to run together. I do love decorating for each celebration though!

This year I've decided to be more purposeful with my decor and use things that are sustainable and easy to use! I really like this theme! So when it comes to putting healthy and nutritious food on our family’s table during this very busy season we want to look for things that are sustainable and easy!

One of our favorite meals to cook with our students is a Smoked Turkey Sausage and Swiss Chard saute over Polenta. Yep, I said Swiss Chard. I love to utilize a "surprise" ingredient to get the student's talking and maybe a little bit bewildered at how they are going to cook and try such a thing. There is something about how the smokiness from the turkey sausage flavors the chard. I kid you not, there is nothing left every single time! The chard cooks up really tender so there is none of the toughness you can get when using kale. The best part, the entire plant can be used from the tender part of the leaves to the stalk! How's that for sustainable?
