Don't Forget About Squash Blossoms!

The first time I tried squash blossoms were on the recommendation of a friend of mine and her father. They were both foodies for sure and knew about interesting recipes that even I had never tried. One of those foods was okra if you can believe it! The other was squash blossoms. That particular year, I had grown a huge garden. The zucchini plants quickly took over and beautiful yellow blossoms that reached for the sun came along with them. My friend came over one afternoon for some chit-chat and coffee and I excitedly showed her my growing garden. When she saw the blossoms, she mentioned to me that I could eat them. I had no idea! There were so many! She told me her dad had the best recipe to cook these yellow flowers and had me call him for instructions. Her dad was just as excited about my bounty of squash blossoms! Needless to say, I was so happy to have this information and I couldn't wait to try this amazing find. That evening, I washed and cleaned these little flowers just as my friend's father had instructed. I then dipped them in a thin batter and fried them up! I was in LOVE! There are so many beautiful things that oftentimes we don't even think about eating. There is so much variety for every taste and palate. So if you have grown squash this year, don't forget about the delicious squash blossoms!
