During our Bramble Market cooking class on August 10 we enjoyed making something delicious from Zucchini and Yellow Squash. A simple Balsamic Drizzle adds a special something to this dish. It makes a great side for summer dinners!
Sautéed Zucchini and Yellow Squash with Balsamic Drizzle
1 yellow squash
Fresh basil, chopped
Aged balsamic vinegar
Slice zucchini and squash into thin rounds and add to a hot pan with olive oil. Sauté until soft and brown caramelization is present. Add chopped basil and sauté for 1 minute. Take off heat and drizzle the balsamic vinegar. Serve along side your favorite protein or its perfect on its own!
