Mark Twain famously said, “Travel is fatal to prejudice, bigotry, and narrow-mindedness, and many of our people need it sorely on these accounts. Broad, wholesome, charitable views of men and things cannot be acquired by vegetating in one little corner of the earth all one's lifetime.” And while Twain may have been speaking of bigotry and narrow-mindedness of another kind, I apply this to food when I’m out of my comfort zone.
Such as the case the first time I had cucumber paired with citrus. I was on an Aruba vacation my husband in 2015. The flavor combination took me by surprise! The sweet tart of the citrus married so well with the slightly bitter yet distinct flavor of the cucumber. I thought, "Wow! I'm going to make this for my family at home!"
And so, the perfect spring salad was born. My Spring Cucumber and Orange Salad is one of my very favorites and the good news is my kids love it too. It's dressed ever so lightly as to not spoil the wonderful flavors of the star of the salad, the oranges and cucumbers.
Spring Cucumber and Orange Salad
Bring home the flavors of your travels is the best souvenir!
1 large english cucumber
2 medium oranges, peeled and sectioned.
1 small package of spring salad mix
1 tbs Arkansas honey (local honey is always recommended)
2 tbs olive oil
2 tbs rice wine vinegar
Salt and pepper
Wash and clean salad mix. Add to a large serving bowl.
Chop english cucumber into bite size pieces and add to salad mix. Next, add orange sections.
Whisk together all dressings ingredients and toss with salad mixture.
