Easy Strata Recipe

The past week has been a learning experience for our family as schools around or state closed their doors for online classrooms, all of this a caution to protect families from the spread of COVID-19. My littles are hanging in there. They miss their friends, sure, but are working around it. We're enjoying safe distance activities outside such as going on bike rides, taking the pups for a walk, or a stroll with friends at a reasonable social distance.

But even with all the extra TLC, I wanted to do something special for them for breakfast. So I present to you my easy breakfast strata recipe.

Strata or stratta is a family of layered casserole dishes in American cuisine. The most common modern variant is a brunch dish, similar to a quiche or frittata, made from a mixture which mainly consists of bread, eggs and cheese. It may also include meat or vegetables. -Wikipedia


  • Almost old bread, this recipe is ideal for the unwanted end pieces which so often get tossed

  • 6 eggs

  • 1 1/2 cup milk

  • Turkey sausage: 1 C cubbed

  • 1 C chopped Kale including the stems

  • Salt and pepper to taste

  • Lemon zest


Tear or cut the bread into 1" or so pieces and place into a baking dish. Add eggs and milk to create a slurry. Add in sausage, kale and season with salt, pepper, and lemon zest. Bake at 375 for 50-60 minutes or until a knife come out clean. Makes six or more slices.
