Denise will be on THV The Vine on Tuesday, April 30. She'll be sharing a summer favorite of her family, an easy pasta salad. One of the nice things about this pasta salad is you can adjust the portions to your liking or substitute ingredients. This is a great way to get kids involved in preparing a meal. Kids often respond to the texture and shape of foods as well as their flavors so consider that when selecting items.
Ingredients -Package of bowtie pasta, cooked to al dente
-Package of spring green mix from local grocery (lettuce, spinach, etc)
-Fresh mint, chopped
-Heirloom grape tomatoes, cut in half
-One lemon, zested
-Fresh chives, you can even use the bloom -High quality apple cider vinegar
-High quality olive oil
Cook pasta according to package directions to al dente, or slightly firm. Allow pasta to cool down but if in a hurry you can chill it down quickly in an ice bath.
Dump pasta into large bowl, add spring greens, add mint, add tomatoes, peas, and chives. The amounts are really up to your taste. Toss salad mixture and top with 1 tablespoon apple cider vinegar and 3 tablespoons olive oil, making a light dressing. Top with grated lemon zest. Toss and serve.
