
Fall Recipe: Apples, Onions, Italian Sausage Over Perogies

Denise shares a recipe that was inspired by the Polish community in the Iowa town she grew up in and became a favorite during her honeymoon days because it was quick and healthy.
She says you can serve over any starch but she enjoys pre-made perogies filled with cheese.
Ingredients
1 onion
2 fresh apples (Honey Crisp were used in this recipe)
Olive oil for sauté
Chicken stock
Salt, pepper, and thyme for seasoning (fresh or dried work in this recipe)
1 head of fresh kale
2 deli-style Italian sausage links
1 package of pre-made cheese perogies or starch of your choice (Denise recommends rice, polenta, noodles)
Steps
Sauté chopped apples and onions in olive oil.
Add a splash of chicken stock to sauté pan to help soften onions.
Season sauté with salt, pepper, and thyme.
Continue until the apples and onions are caramelized. The brown bits will add to the flavor.
Add Italian sausage until cooked through.
Steam perogies in sauce pan by heating one cup of water and then adding the perogies until tender.
Add chopped kale to sauté until wilted and incorporated.
