Grilling the Devil's Vegetable

According to my husband, eggplant is the Devil's vegetable!
As those that follow me know, I have some delicious vegetables growing in my small urban garden including eggplant plants. The variety I picked was the small Japanese eggplant. Now, I love eggplant. It's a beautiful and versatile veggie. But my husband doesn't like eggplant, not because of the taste mind you, its the texture! In fact he not so loving calls it the "Devil's Vegetable!"

I don't recommend this kind of attitude out of the adults that have great influence on what their children eat. So you can imagine my appreciation of his Devil's veg mantra. Especially when our son took to calling it something similar. So what's a dietitian foodie to do? I decided to surprise them with a delicious eggplant recipe that had them fooled into at least taking a bite... and changing their minds.

Grilled Eggplant
Ingredients
1 small eggplant sliced thin
1 tsp oregano
1 TBS fresh mint chopped
3 TBS olive oil
1 TBS wine vinegar of any kind
dash salt and fresh cracked pepper
Directions
Add all ingredients together in a bowl and let marinade for 30 minutes or overnight.
Grill on an outside grill if you like, or use an indoor grill pan. Serve with pasta or as a side to any protein.
