Kimchi is a fermented product teeming with microbes that are amazing for gut mucosa and natural flora. Polenta is cornmeal which is actually a whole grain and is full of vitamins and minerals that are lost when grain is processed. This recipe can easily be made vegan with a vegan sausage such as the "Awesome Burger" brand and vegan cheese.

Boil Polenta according to package directions. Sauté sliced onion with 1TBS olive oil. Add sliced sausage and let brown with onion. Add whole jar of Kimchi and continue sautéing until warmed through.
When polenta is thickened add 1/2 cup shredded parmesan cheese. Salt and pepper to taste.
Spoon kimchi sausage over serving of polenta. Add parmesan cheese to garnish at table. Enjoy with a tear of crusty bread if you like.
