This Sunday we will celebrate moms everywhere! Mother's are amazingly special and deserve a day set aside in honor of them. Being a mom is full of selfless sacrifice and the tireless energy. But we're happy to do it because that's what it takes to raise a child. And, I don't know about you, but my perspective has changed dramatically since becoming a mom myself. While I want to honor my own mother, I also enjoy my family allowing me the time to sit back and unwind. Who doesn't look forward to Mother's Day morning and the thought of breakfast in bed? So if you're thinking, huh, maybe I should treat my spouse (or maybe you want to drop a HUGE hint by printing this out and leaving it for them) then have I got a treat for you!
Mother's Day Breakfast Strata
Half a loaf of bread chopped into small bits (herbed bread and/or any day old bread is great here)
6 large eggs
1 cup Skim milk or unflavored milk alternative
4 slices crumbled turkey bacon
1 half white onion chopped
1 cup chopped broccoli rabe
1 cup Monterey Jack Cheese, shredded
In a greased 9x13 pan assemble chopped bread. Mix eggs and milk thoroughly in mixing bowl along with onion, bacon, and broccoli rabe. Pour egg mixture over bread and layer cheese over the top. You can cover and refrigerate overnight or let sit for 15-20 minutes until egg has soaked into the chopped bread. Bake, uncovered at a 350 degree oven for 30-40 minutes or until a knife test in center comes out clean.
Serve this with a fruit salad, cup of tea or coffee, a small single flower, and a side of hugs! This simple breakfast will be a memory maker for your Mom. Enjoy!
