Happy New Year from all of us at Cooking in Bloom! This January, we're encouraging parents to resolve to get more vegetables in your child's diet. In Denise's segment on Today's THV The Vine, she shares a recipe for delicious vegetable and protein bowls.
INGREDIENTS 1 cup spinach 1 cup bean sprouts 1 cup red pepper strips 1 cup zucchini 1/4 teaspoon salt 1 teaspoon sugar 1/3 cup rice vinegar 1/3 cup warm water Olive oil Chicken sausage Package of udon noodles or cauliflower rice Sauce Ingredients Hoisin sauce (found in the Chinese food section) Mirin sauce (found in the Japanese food section) 2 teaspoons honey 2 teaspoons sesame oil 2 teaspoons water 2 teaspoons rice vinegar 1 teaspoon toasted sesame seeds
DIRECTIONS Sauté vegetables in batches in a skillet with a bit of olive oil.
Lightly sauté chicken sausage in skillet until browned.
Prepare noodles or rice according to package directions.
Create the bowl by topping rice or noodles with vegetable and chicken sausage and add desired sauce.
