So I combed the internet, inserted a little imagination, and came up with some fun spooky treats that are sure to delight your little ghosts and goblins AND best of all, these treats are much healthier than your usual Halloween fare without the scary amounts of sugar.
Frog Swamp Pudding
2 cups greek yogurt
2 heaping TBS honey
1 TBS chia seeds
4 peeled green kiwi
2 handfuls of spinach
gummy frogs for garnish!
Add all ingredients except the chia seeds into a blender or food processor. Blend until smooth and mixture has a nice green color from the kiwi. May add another kiwi to get deeper color. Place blended mixture in a bowl and mix in chia seeds. Spoon green pudding into desired clear cups/bowls. Place in refrigerator for 2 hours or over night. Chia seeds are the magic to this recipe. The will gel similar to gelatin and make a nice pudding consistency. Add frogs like they are erupting or climbing out of pudding! Ooohhh so green and creepy!
Bloody Bean Dip
This is simple and easy. I use creepy Halloween verbs here to make the point. Also, I utilized red foods here so no food dyes are needed to get the desired color.
1 can Tomato Sauce
1 small Tomato Paste
1 C red beans drained
1tsp garlic powder
1tsp ground cumin
1/2 smoked paprika
Blend all ingredients until smooth. If too thick add 1/4 C water util desired consistency. Should not be thick but runny.....like all good blood drips. Serve this dip with strips of vegetables and/or blue corn chips!
Mummy Face Sandwich
French bread sliced horizontally down the middle and then both pieces cut into 4's
1 medium zucchini washed and sliced longways with a potato peeler, making ribbons.
1 can pizza sauce or spaghetti sauce
1 small can of sliced black olives
Spread pizza sauce onto each French bread slices. Add zucchini ribbons to top like you are wrapping...well a mummy! Zig zag as you go along. Cover entire sandwich. Bake at a 400 degree over until on an oiled baking sheet until zucchini is only slightly browned, sauce may bubble just a little. Add 2 black olives for eyes! Mummy face!
Impaled Green Ghouls (Little Dudes)
Bamboo Kabob Skewers
Kiwis some peeled and some peeled only halfway using some of the fuzzy skin as hair
Homemade google eyes or store bought or mini white chocolate chips
Red canned icing if desired for "blood"
Cut the completely peeled kiwi in half and skewer one slice opposite of the other making the middle look like a little body. Add google eyes and mini chocolate chips as buttons or a mouth whichever you prefer or mix it up a little. Skewer the kiwi that still has some fun and add google eyes and mini chip as a mouth if desired. This is fun and easy and looks so cute on the plate. Kids love to eat things on sticks! This is the perfect way as well to get them to eat a fruit that is a wonderful source of fiber, potassium and vitamin C!
